Exams are finally over and that means more time for recipes and videos! Can I hear a whoop whoop?
I’ve been wanting to be more creative in the kitchen for SO. LONG. because I’ve pretty much been surviving of really easy meals. Like, yeah, they’re tasty and easy and full of good stuff to keep me powering through revision mode but now I have time to make recipes in time for summer!
I’ve also been wanting to make more videos so I promise they will be coming soon!
Speaking of summery meals, this is pretty much the epitome of summer. I mean mint just screams fresh and healthy, right?
Zucchini & Mint Salad vegan, gluten free, dairy free
Serves 2
This is the perfect summery side dish to accompany any meal. It actually tastes even better if you can let it marinade for a couple of hours as the flavours really come together. Other herbs like parsley and coriander would also be lovely in this salad!
1 zucchini
1/2 lemon
Few sprigs of mint
Extra virgin olive oil
Salt and pepper, to taste
Shave the zucchini or spiralise to give more of a ‘zoodle’ effect.
Mix the extra virgin olive oil, lemon juice and zest, salt and pepper and the mint together to make a dressing.
Pour the dressing over the zucchini and stir.
Serve straight away with some extra herbs on top or store in the fridge.
This looks so simple. Just looking at all that green makes my mouth water already. This is perfect for the summer!
