Helloooo your new favourite summer dish! I mean, just look at it! It screams health and those gorgeous grill marks on the vegetables – you know it’s going to be flavourful!

I can just imagine myself sitting outside having an alfresco meal with lots of salads like this and ripe tomatoes and basil because if that’s not the epitome of summer I don’t even know what is!

Cauliflower Rice & Grilled Vegetable Salad vegan, gluten free, dairy free
Serves 2

This is the perfect summer meal as it’s so light and easy to make yet so full of flavour and works with any vegetable to your taste, I also love adding grilled aubergine to this! It’s also even more delicious if you add dried fruit like raisins or apricots to add texture and sweetness!

1 zucchini, sliced lengthways
10 spears of asparagus, sliced in half
Handful of steamed green beans or peas
Extra virgin olive oil
Salt and pepper, to taste
Handful of raisins
Coriander, to garnish (parsley would also work)
1/2 lemon, zest and juice
Apple cider vinegar
Cauliflower rice, to serve (I keep it raw but you can sauté it)

Make your cauliflower rice and set aside.

Heat a grill pan or you can use a George Foreman grill.

Add oil to the grill and add the zucchini and season with salt and pepper.

Let it cook untouched for about a minute and when the grill marks show, flip it over.

Do the same for al the zucchini and the asaragus and once cooked, set aside.

Plate your bed of cauliflower rice and drizzle with extra virgin olive oil, apple cider vinegar and salt.

Top with grilled vegetables, sprinkle of beans or peas, lots of coriander and raisins.

Serve with lemon wedges on the side.

So the sun finally decided to peep out this weekend which was super lovely and got me back into the mood for healthy yet delicious light lunches!

This is one of my favourites due to the versatility of the dish and how easy it is to make. It’s wonderful like this, with some herbs like cilantro in the mix and grilled vegetables or chicken or prawns would be wonderful too!

Easy Sushi Bowl vegan, gluten free, dairy free
Serves 1

This is a super easy recipe that’s perfect for lunch: just throw together any leftover grains with some veggies and proteins like tofu, chicken or prawns would go perfectly too! Feel free to switch up the ingredients!

Brown rice (substitute with any other rice, quinoa)
Lettuce (substitute with spinach, salad greens)
1/4 cucumber, cubed
A few florets of broccoli, steamed
Dash of tamari (substitute with soy sauce)
1/2 teaspoon grated fresh ginger
Dash of apple cider vinegar (substitute with lime or rice wine vinegar)

optional: toasted sesame oil (for rice), sesame seeds, nori, tofu, chicken, pork, prawns, tuna.

Mix the rice with tamari, ginger and apple cider vinegar and set aside.

Compose your bowl by adding a bed of salad leaves then top with rice and vegetables.

Sprinkle with sesame seeds and also a drizzle of sesame oil.

As this was the most popular post of 2014, I decided to reshoot and re film the tutorial for how to make cauliflower rice!

When i first came across this glorious side dish, all the tutorials contained a food processor, which was a bummer for me since I didn’t have one! Since then, I’ve experimented many ways of how to create the perfect rice like consistency without one and here I show you 2 of my favourites!

My favourite way to serve this is in the form of fried rice – you’ll find that it’s a great way to sneak veggies into kids! 😉

Cauliflower Rice vegan, gluten free, dairy free

This is a super easy side dish or main dish to make – only full of good stuff and great if you’re feeling something light! You can also eat this raw, which I’m sure would be lovely in the summer months!

Method 1

Cauliflower florets
Box grater

Grate the cauliflower florets on the grater and it will produce a fine consistency.

One thing that should be noted with this method is it’s slightly tricky to grate the stalks to be careful of your fingers!

Method 2

Cauliflower florets
Blender (I use a nutribullet)

Put small chunks of cauliflower into the blender and pulse it a few times.

This method may yield to a slightly more wet ‘rice’ so I would recommend sautéing if you choose to make it this way.
I sauté by adding some extra virgin olive oil or coconut oil to a pan and season with salt then serve when it starts to brown!
