Chocolate Cornflake Cakes

I’m not really a baker myself, so these are perfect for someone like me if I ever need to make a sweet treat. Such a simple recipe, they will honestly never go wrong and always go down a treat (even though they’re so easy and require a minimal effort)!

These ain’t no ordinary chocolate cornflake cakes though – they’re bursting with melty (my computer nearly autocorrected that to meaty…) marshmallow and chopped up hazelnuts, to give them a bit of a Ferrero Rocher feel.
You can add whatever you want, whether it’s chunks of cookie, other nuts, dried fruit – WHATEVER your heart wants! Go ahead, give it a try – you’ll thank me later!

Chocolate cornflake cakes
Makes about 15 cakes

100g dark chocolate
15g milk chocolate
2.5 tablespoons salted butter
1 tablespoon golden syrup
About 5 handfuls of cornflakes
Handful of hazelnuts chopped
Handful or marshmallows, chopped (or use mini marshmallows)

Place bowl so it balances on top of a saucepan.

Fill saucepan with water and let it bowl, then put bowl over with chocolate, butter and golden syrup in it.

Once they have melted, add cornflakes and nut.

Once all ingredients are incorporates, stir in marshmallows until starting to melt.

Put mixture into cupcake moulds or into a square tin (if you want to make them into bars) and let them set for about and hour in the fridge.

These last for up to a week in an airtight container.
