So our friends recently came from Japan and brought us SO. MANY. GOODIES. Like I can’t really handle the amount of mochi and osembe we have, so I’ll be in the kitchen hibernating with all the food if you need me!

It’s always fun to see what healthy food restaurants are coming up in London as it seems like the healthy food scene is starting to pop up in many places!

I recently found out about Maple & Fitz after reading a column in the Saturday Times of the delicious salads they had to offer and knew I had to try it out!

They have a great concept to grab and go for an easy and healthy lunch and also have a cute seating area for a few upstairs and also a cosier one downstairs with the most gorgeous rustic wooden tables, reminiscent of dark maple wood.

They have a wide plethora of food on offer, from granola to miso porridge in the morning to salads and cold pressed juices and lunch, and of course, sweets and snacks for that afternoon pick me up!

I tried out a selection of some of their salads from the wide range, all which have super cute names like Julius Caesar for the caesar salad!

The samurai slaw (gf, df) was out of this world good! They describe it as a salad with cabbage, soba noodles, shredded carrots, mint, coriander, sesame, spring onion, a hint of red chili and a miso sesame soy dressing. I could have had a massive bowl of this – I could taste all the ingredients that were all super fresh and it was full of wonderful textures.

I also got the Mexican standoff (df) was also packed with delicious flavours from the avocado, grape tomatoes, black beans, red onion, fresh jalapenos, bulgur wheat and had a coriander lime pesto dressing that was wonderfully fresh and complimented the dish perfectly.

The third salad I chose was the cauli in Mumbai (gf, df) – this was a quinoa salad with Indian spiced roasted cauliflower, toasted almonds, peppery rocket, shredded carrots and a white shallot vinaigrette. Although this was good, I definitely preferred the freshness of the other two salads, but perhaps it was because it was a particularly sunny day! I definitely recommend this to people who love spice: think of it almost as a salad with the flavours of the gobi.

They also had other salads on offer, such as their famous Julius Caesar (gf), Lady Pom and a roasted vegetable soup. You can also get add on proteins from £2 if you want to bulk up your meal.

I got one of the juices to go and it was seriously delicious! I’m a green juice lover so it was only right fot me to get the Kale-aid packed with kale, spinach, romaine, celery, cucumber and green apple. I’m not a huge fan of overly fruity green juices but this had the perfect sweetness and tang from the green apple and the celery and cucumber gave a wonderful freshness!
They have seven other juices to choose from and it seems like their almond milks are popular as they flew off the shelf!

I also got to meet the lovely owner, Adria, who was s sweet and you could really see her passion for healthy food, which makes me even more inclined to return!
Overall, this is a definite recommendation if you are looking for a quick and easy spot to grab lunch in London. I can definitely see it getting super popular in the summer when the sun starts to peek out a bit more so be sure to check it out!

My Favourite Superfood Salad

This is my favourite salad to bring for lunch as it combines all the best elements of a salad: fresh and light yet full of flavour, creamy and moreish!

It’s super simple to prepare everything and just throw it all together for a quick and easy lunch! It also goes well with any other leftovers you have!

Plus, this salad is packed with good stuff! Sweet potato acts as a complex carbohydrate to keep you going throughout the day, green beans and broccoli are steamed until al dente to give a fresh crunch and add some green to your day,courgette is roasted to bring out it’s sweetness and the spinach creates a great base that’s not too overpowering.

As well as this, the creamy tahini dressing is filled with calcium, vitamin E, healthy fats and protein. So no need to skimp on this dressing (it’s super easy to make as well!)

Superfood Salad vegan, gluten free, dairy free
Serves 1

I think this is the perfect salad: it keeps you full yet you finish it feeling light and ready to ace the afternoon. A perfect balance of sweet, creamy potatoes as well as packing a punch with the greens and the creamy tahini dressing!

2 handfuls of spinach (you can also use kale)
1/2 courgette, sliced into rounds
A few florets of broccoli
Handful of green beans (you can also use mangetout or sugar snap peas)
1 sweet potato, cut into rounds

1 tsp of tahini
Water
1/4 lemon
Salt and pepper, to taste

Preheat your oven to 180ºC and place your sweet potatoes on a baking tray on a piece of oiled tin foil.

Bake the potatoes for 25 minutes then flip and cook for a further 15 minutes.

Do the same with the courgette and place in the oven for 25 minutes then take out.

While this is happening, steam your broccoli and beans (you can also roast them with extra virgin olive oil and salt if preferred).

You can also make the dressing by mixing the tahini, lemon, salt and pepper and water until it becomes a smooth, pourable consistency.

Place the spinach in a bowl and top with ingredients.
Drizzle with the tahini dressing and serve.
