Healthy Coconut Granola

I was recently in Waterstone’s and saw a book called ‘I Quit Sugar‘, which I was intrigued by. It’s a very interesting book and all but one recipe really caught my eye – the coco-nutty granola.
It’s basically a granola but you can make it without the oats so its more of a coconut and nut concoction that you can have on top of your yoghurt or even out it on top of your normal cereal for that extra kick. To be honest, you can have it anytime anywhere. I’m the last person to judge you if you eat it in bed at 3am or on the couch binging on Sherlock.

You could also definitely gift this if you put it in a cute jar – I would be chuffed to receive it!

Sidenote: When I was making this, it literally smelt amazing. Kind of like an Anzac cookie, which used to be my ultimate favourite thing. I am literally craving one now.

Healthy Coconut Granola vegan, gluten free and dairy free
Makes 1 cup

2-3 Tablespoons extra virgin olive oil or coconut oil
45g coconut flakes
30g rolled oats (optional)
Handful of nuts (I used walnuts and pistachios)
1 tbsp poppy or chia seeds
Sprinkle of cinnamon, chopped dates (optional)
Spoon of honey, maple syrup or agave (optional)

Preheat oven to 150 degrees celcius.

Mix all ingredients, apart from dates and any other dried fruits add ins.

Put on baking tray in the middle of the oven for 15-20 minutes, mixing halfway through.

Serve with greek yoghurt and a spoonful of honey.
