Don’t let the title fool you – although this dish sounds super simple, it’s anything but!

Zoodles are lightly sautéed so they still retain their bite but are topped with the most fragrant thyme and sake sauteed mushrooms to bring out the incredible earthy flavour.

Sake is like my secret weapon, of course you can use it interchangeably with white wine in this recipe, but either way, make sure you use something as it really takes this dish from boring to tantalising to your senses.

Serves 1

This is a super light, healthy and quick dish to make but tastes amazing. The earthiness of the mushrooms are perfect with the light zoodles and the garlic infused olive oil that you add at the end bring the dish to an amazing close.

1-2 zucchini, spiralised (if you don’t have a spiraliser, look here!)
Handful of mushrooms
Fresh or dried thyme
Dash of sake (or white wine)
Extra virgin olive oil
Salt and pepper, to taste
Garlic infused olive oil (to serve)

Add some olive oil to the pan and sauté your zucchini with a pinch of salt.

After about 2 minutes, they should be lightly cooked but still retain their texture. Set aside.

Heat a non stick pan to high and without adding any oil, add your mushrooms and a pinch of salt.

Let them sit for a minute until they’ve browned on one side and then stir.

Add the thyme and black pepper and sauté until slightly fragrant, then add the sake.

Wait for the sake to evaporate and then you can add the mushrooms to the zucchini.

Serve immediately.

So I FINALLY filmed a video! I know, finally. Apart from my April Favourites (so much fun to make!), it’s been 2 months. Oh em gee.

I know this is a super easy meal but I feel like everyone needs a stir fry recipe under their sleeve and it’s so much nicer to put your favourite vegetables in and keep it nice and fresh rather than buying a pre made stir fry bag (aka 90% bean sprouts)!

Serves 2

Stir fries are so easy and versatile – you can add any vegetables that you like! I’ve listed quantities here, but it’s easy to make more or less and I love making it in bulk to provide me with meals and sides throughout the week! If you have fresh coriander (cilantro) I highly recommend you add it for an amazing fresh flavour!

1/2 head broccoli, lightly steamed
Handful of green beans, lightly steamed
1 bell pepper
1 zucchini
Handful of mushrooms
3 spring onions
Small chunk of ginger
Coconut oil or olive oil
Salt and pepper, to taste
1/2 lemon or lime, to squeeze over the top
Sesame seeds, for garnish
Coriander (cilantro), for garnish

Slice the vegetables into roughly the same size.

Heat pan until hot and add the oil and spring onions.

Turn the heat down to medium and allow the spring onions to get soft then add the ginger.

Once fragrant, add the zucchini, mushrooms and bell pepper.
Season along the way.

Once nearly cooked, add the lightly steamed broccoli and green beans.

Turn the heat off and stir through the coriander (stalks too!) and squeeze over the lemon or lime.

Serve with a sprinkling of sesame seeds and extra coriander.

I’ve been wanting to be more creative in the kitchen for SO. LONG. because I’ve pretty much been surviving of really easy meals. Like, yeah, they’re tasty and easy and full of good stuff to keep me powering through revision mode but now I have time to make recipes in time for summer!

Speaking of summery meals, this is pretty much the epitome of summer. I mean mint just screams fresh and healthy, right?

Serves 2

This is the perfect summery side dish to accompany any meal. It actually tastes even better if you can let it marinade for a couple of hours as the flavours really come together. Other herbs like parsley and coriander would also be lovely in this salad!

1 zucchini
1/2 lemon
Few sprigs of mint
Extra virgin olive oil
Salt and pepper, to taste

Shave the zucchini or spiralise to give more of a ‘zoodle’ effect.

Mix the extra virgin olive oil, lemon juice and zest, salt and pepper and the mint together to make a dressing.

Pour the dressing over the zucchini and stir.

Serve straight away with some extra herbs on top or store in the fridge.
